One indication of the beneficial properties of green tea came from studies that showed that tea ceremony masters are particularly healthy. Green and black tea are made from the same plant, whose botanical name is Camellia sinensis.
But what distinguishes green tea from black tea? Black tea is nothing other than fermented green tea. Shortly after the Europeans discovered the tea's delicious properties, they began to ferment it, as this was the only way it could survive the sometimes very long sea voyages without spoiling.
