First things first: If there is truly no time for breakfast, you might want to consider simply skipping this meal (intermittent fasting). See if you don't actually feel better doing that than you would with a hastily gulped-down breakfast.
Otherwise, there is, of course, nothing better than a crunchy, homemade, and healthy muesli mixed into milk, quark, or probiotic yogurt – just as you like it. Here, we would like to present a simple, sugar-free recipe that you can prepare with your favorite nuts and season to taste with cinnamon, ginger, and cacao. Everything together makes for a delicious and crunchy granola. If you prepare several trays at once, you will have your weekly supply sorted at the same time.
By the way: The nuts included provide valuable unsaturated fatty acids and are excellent sources of magnesium. Furthermore, they contain B vitamins and are therefore popular for increasing performance and concentration, countering fatigue, and fighting stress.
Cacao nibs are fragments of raw, unfermented, and unroasted cacao beans. The emphasis here is on "unfermented," as this preserves all important nutrients, including flavanols, antioxidants, and iron. Together with spices such as cinnamon, ginger, turmeric, and/or vanilla, you get a special nutrient boost for a stress-free morning.
The breakfast recipe is gluten-free, lactose-free, sugar-free, and vegan.
Let’s get started:
Ingredient list:
200 g organic coconut chips
250 g favorite nuts (almonds, hazelnuts, walnuts, cashews, pistachios, Brazil nuts (chopped) - the nuts should be raw, meaning not roasted and not salted.
3 tbsp chia seeds
100 g melted coconut fat or ghee
A total of 3 tsp spices (for example, 2 tsp cinnamon and 1 tsp vanilla)
Organic cacao nibs to taste
60 g raw cacao
Optional:
3 tbsp maple syrup
Preparation:
Preheat the oven to 130 degrees. In the meantime, mix all ingredients together in a bowl.
Now distribute the ingredients onto 2 baking trays so that they are not too crowded or lying on top of one another.
Roast the trays for a total of 20-25 minutes, turning everything after the first 10 minutes to prevent burning.
When the time is up, take the trays out of the oven and let the granola cool. Anything not used immediately can be stored in airtight jars for a few days.
