The word "bitter substances" might not sound that appealing, but the artichoke contains plenty of them, which benefit our gallbladder and liver. - 12 artichokes
- 3 garlic cloves
- 2 onions
- 2 pinches of sweet paprika
- 2 bay leaves
- Water or vegetable broth
- Salt
- White pepper
- Juice of one lemon
- Sea salt
- For frying: rapeseed oil
- A splash of white wine
Remove the tough artichoke leaves until you reach the light yellow bud leaves. Now cut off the top half and the stem. Quarter the artichoke hearts. Place the quartered artichoke hearts in a bowl of water with lemon juice. The reason: cut artichokes quickly turn gray-black. The lemon juice slows this down.
Peel the garlic cloves and onion and dice them finely.
Sauté in this order: lightly brown the garlic cloves in rapeseed oil. Add the onions, 2 bay leaves, and 2 pinches of sweet paprika. Don't wait too long, otherwise the paprika will become too bitter. Now drain the artichoke hearts and add them to the pan. Sauté briefly. Now you can add water or vegetable broth until the vegetables are covered. Season with salt and pepper to taste. Add 2 splashes of white wine and let it simmer over low heat with the pan covered for 20 minutes.
