A delicious vegetarian recipe for the cold season. When it's raining, snowing, or storming outside, make yourself comfortable in your kitchen. It's best to invite a few friends over to cook and enjoy the meal together. For this, you will need:
Ingredients:
Broccoli or kale leaves
1/4 cup olive oil
4 garlic cloves, thinly sliced
1 medium red or yellow onion, thinly sliced
Salt and black pepper
1 pinch freshly grated nutmeg
2 to 3 tablespoons tomato paste
Red pepper flakes (optional)
3 cans large white beans, drained and rinsed
4 cups vegetable or chicken broth
1 lemon, halved, for squeezing
100 g feta cheese
1 cup parsley or cilantro
Preparation:
- Cut broccoli or kale leaves into bite-sized pieces and set aside.
- Heat 1/4 cup olive oil in a large pot over medium heat. Add garlic and onion, and season with salt and pepper. Cook, stirring occasionally, for 4 to 6 minutes until lightly browned and sizzling at the edges.
- Add tomato paste and a pinch of red pepper flakes. Cook for about 2 minutes until the paste has a nice brick-red color and the oil has turned a beautiful, vibrant orange.
- Add beans and season with salt and pepper. Use a wooden spoon or fork to crush a few beans to release their creamy insides.
- Add the broth and season with salt and pepper. Simmer on low heat for about 15 to 20 minutes until the desired consistency is reached.
- Add the broccoli or kale leaves and lemon juice, and stir until the greens have wilted. Season with salt, pepper, and more red pepper flakes if desired.
- Serve with feta cheese and parsley.
