Ingredients:
Potatoes, artichoke hearts, spring onions, lemon balm, oil, salt, pepper, mustard, vegetable broth, 1 organic lemon
Preparation:
1. Boil the potatoes in a pot of water until cooked, peel, and slice.
2. Drain the artichoke hearts and quarter them. Wash the spring onions and cut them into fine rings. Wash and dry the lemon balm, then finely chop the leaves.
3. Wash the organic lemon thoroughly with hot water, dry it, and finely grate about 1 tsp of lemon zest. Squeeze out the juice.
4. Mix the lemon juice, zest, salt, pepper, mustard, vegetable broth, and oil to create a marinade. Mix in the spring onions and lemon balm, then combine with the artichoke hearts and potatoes. Let the potato salad sit for 1 hour. Season with salt and pepper to taste before serving.
