A recipe for light summer cooking. This salad is ideal for hot summer days, when it's warm all day long and you don't feel like eating heavy food for lunch or dinner. Simple and quick to prepare with delicious and, above all, healthy ingredients that boost your immune system.
For example: Avocado contains unsaturated fatty acids that nourish us from within. In cherry tomatoes, you will find a phytonutrient called lycopene. This red tomato compound is an antioxidant that protects our body against free radicals. And finally, before we get to the recipe, one good tip: use high-quality plant oils in your kitchen. Cold-pressed olive oil contains phytosterols, which are good for the cardiovascular system.
Now for the recipe. You will need these
Ingredients for the tomato-melon salad (4 servings):
- one cantaloupe melon
- 250 g yellow and red cherry tomatoes
- 1/2 red onion
- one avocado
- one lime
- one tbsp honey
- one tbsp apple cider vinegar
- 3 tbsp avocado oil (or olive oil)
- 5 sprigs of mint
- salt, pepper
Preparation:
Halve the melon, remove the seeds, and dice the fruit. Wash and quarter the cherry tomatoes, peel the onion half and slice it thinly. Halve the avocado, remove the stone, peel, and cut into cubes or slices. Put all ingredients into a large bowl and mix.
Halve the lime and squeeze out the juice. Add the honey, vinegar, oil, a little salt and pepper, and whisk everything into a dressing. Pour over the salad. Wash the mint, shake dry, pluck the leaves, and garnish the salad with them.
